Hi! Recipe- Braised Beets+Plums+Brie
Recipe Courtesy: Chef Xavier Fernandes, City Chef, Salt Water Cafe, Churchgate, Mumbai
4 plums (deseeded)
Brie (diced as required, the more the merrier)
1/3 cup walnuts (toasted)
1 tbsp dill (chopped)
5 arugula leaves (or more if you prefer)
3 tbsps extra virgin olive oil
For the braised beets:
6 medium sized beets
2 thick skinned oranges (skinned and juiced)
A small bunch of thyme
2 tbsps balsamic
2 tbsps sugar
Salt and pepper to taste
½ cup water
• Mix all the ingredients for the beets and put them in a saucepan. Cover tight and braise them in a pre-heated 150°C oven for an hour. Poke a knife in the beet—it should be soft.
• Strain the liquid and reduce to a syrupy consistency. Cool. Mix in the olive oil and the dill.
• Peel the beets, dice and add to the syrup.
• To serve, mix the beets, chopped plums and walnuts. Coat well with syrup. Top with arugula and brie.
